Brown Butter Apple Cake Churro Bites

These are brown butter apple cake cubes with buttery, crisp edges, a soft cinnamon center, and maple churro sugar tucked into every corner. Air frying gives the cake a second golden crust while keeping the middle tender. Then comes the warm salted maple brown butter caramel: nutty, sweet, and thick enough to cling to the bite. It’s apple cake, churro, and caramel apple in one messy little dunk.

Ingredients you’ll need:

  • Freeze-dried apple powder: Adds apple flavor directly to the cake batter without fresh apple slices. Choose an unsweetened whole-apple powder.
  • Unsalted butter: Browned butter flavors the cake and caramel, while a little melted butter helps crisp and coat the bites.
  • Greek yogurt: Adds moisture to the cake batter.
  • Maple sugar: Sweetens the cake, makes its cinnamon crunch topping, and coats the warm churro bites.
  • Pure maple syrup: Adds sweetness to the cake and forms the base of the dipping sauce.
  • Cinnamon: Runs through the cake, topping, and churro coating.
  • Coconut sugar: Adds a deeper caramel flavor to the maple sauce.
  • Whole milk: Loosens the cake batter and helps turn the maple syrup mixture into a pourable sauce.
  • Vanilla bean paste and sea salt: Round out the cake and balance the sweetness of the caramel.

Why You’ll Love This Recipe

  • Crisp outside, soft inside: Large cake cubes keep their tender centers while the edges toast.
  • Brown butter throughout: It brings nutty flavor to both the cake and dipping sauce.
  • A cinnamon crunch coating: Warm butter helps the maple cinnamon sugar cling to the bites.
  • Made for leftover cake: Once the cake is baked, this becomes a quick second dessert.
  • No fresh apple layers to cut through: Apple powder goes directly into the batter.
  • Warm salted maple caramel: Every bite gets a generous dunk.
  • Refined sugar free: Maple sugar, maple syrup, and coconut sugar provide the sweetness.

How to Make Brown Butter Apple Cake Churro Bites

Step 1: Bake the Apple Powder Cake

Brown the butter and reserve some for the topping. Mix the cake batter with apple powder, spread in the pan, and cover with the brown butter cinnamon maple topping. Bake until the center is set, checking earlier than you would for the original fresh-apple cake.

Step 2: Cool and Cube

Cool the cake completely and refrigerate before cutting. Use four equal slices and cut into substantial cubes so they stay soft inside.

Step 3: Make the Maple Caramel

Brown the butter, add maple syrup and coconut sugar, then slowly whisk in the milk. Cook gently until glossy and let it stand briefly to thicken.

Step 4: Air Fry the Cake Bites

Lightly brush the cubes with butter and air fry in a single layer. Turn gently halfway through and remove when the edges are crisp and golden.

Step 5: Coat While Hot

Brush with the remaining butter and gently roll in maple cinnamon sugar immediately. The warm surface helps the coating stick.

Step 6: Dunk and Serve

Serve the bites fresh from the air fryer with the warm salted maple brown butter caramel.

Tips for the Best Brown Butter Apple Cake Churro Bites
  • Refrigerate the cake before cutting so the cubes hold their shape.
  • Keep the cubes around 1–1½ inches rather than cutting tiny pieces that dry out.
  • Leave space between the bites and air fry in batches.
  • Turn carefully with a small spatula or tongs without squeezing.
  • Watch the cinnamon topping closely as it can brown before the rest of the cube.
  • Coat while hot, then serve immediately for the crispest edges.
  • Keep the caramel warm rather than piping hot so it clings better.
How to Store
  • Fridge: Store the cake and leftover bites in airtight containers for up to 4 days. Keep the caramel in a separate covered container for up to 4 days. The sugar coating will soften during storage.
  • Freezer: Freeze uncoated cake cubes for up to 2 months. Thaw before air frying.
  • Reheat: Air fry leftover bites at 320°F for a few minutes, checking frequently. Warm the caramel gently, stirring in a splash of milk if it is too thick.
  • Make Ahead: Bake and chill the cake and prepare the caramel in advance. Cube, air fry, and coat just before serving.
Frequently Asked Questions

Can I Use My Original Fresh-Apple Cake?

Yes. Completely cool and refrigerate it before cubing. Handle the pieces gently because the apple layers make them more delicate. Use the same air fryer temperature and check frequently.

What Kind of Apple Powder Should I Use?

Use unsweetened freeze-dried whole-apple powder. You can also finely grind plain freeze-dried apples. Avoid substituting apple fiber or pectin.

Can I Make These With Leftover Cake?

Yes—that is the quickest way to make them. Start with four equal slices of completely cooled cake and go straight to the caramel and air fryer steps.

Why Are My Cake Bites Falling Apart?

The cake may be too warm, the cubes too small, or the handling too rough. Chill the cake first, cut substantial cubes, and gently roll them in the coating rather than shaking vigorously.

Does This Recipe Contain Cinnamon Toast Crunch Cereal?

No. The cinnamon crunch comes from butter, maple sugar, and cinnamon baked onto the cake.

Can I Use Only Part of the Caramel?

Absolutely. Serve it on the side so everyone can choose how much to use. The nutrition estimate assumes the full sauce is divided between four servings.

  • 3/4 tsp sea salt
  • 1 tsp ground cinnamon

  • 1/2 cup maple sugar
  • 1 1/2 tbsp ground cinnamon
  • 1 pinch sea salt

Apple Cake Churro Bites

  • 4 slices prepared brown butter apple powder cake
  • 1 tbsp unsalted butter

Maple Churro Sugar

  • 1/3 cup maple sugar
  • 1 1/2 tsp ground cinnamon
  • 1 pinch sea salt

Salted Maple Brown Butter Caramel

  • 3 tbsp unsalted butter
  • 1/3 cup pure maple syrup
  • 2 tbsp coconut sugar
  • 1/4 cup whole milk
  • 1/2 tsp vanilla bean paste
  • 1/4 tsp sea salt

Method

Make the Cake
  1. Preheat the oven to 350°F. Grease a 9-inch springform pan and line the bottom with parchment.
  2. Melt the 10 tablespoons butter in a saucepan over medium heat. Cook, stirring frequently, until the milk solids turn golden brown and smell nutty.
  3. Immediately transfer to a heatproof bowl. Measure 3 tablespoons of the finished brown butter into a separate bowl for the topping. Let the remaining butter cool for about 10 minutes.
  4. Whisk the remaining brown butter with the maple sugar and maple syrup. Whisk in the eggs one at a time, then add the Greek yogurt, milk, and vanilla.
  5. In a separate bowl, whisk the flour, apple powder, baking powder, baking soda, salt, and cinnamon. Fold into the wet ingredients just until combined.
  6. Spread the batter evenly in the prepared pan. Drizzle the reserved brown butter over the surface and gently spread it without disturbing the batter.
  7. Mix the topping’s maple sugar, cinnamon, and salt. Sprinkle evenly over the buttered surface.
  8. Begin checking after 35 minutes; approximately 35–50 minutes is a starting range for this apple-powder variation. The center should be set, and a tester inserted into the cake should come out without wet batter. Tent loosely with foil if the topping darkens before the center finishes baking.
  9. Cool in the pan for 30 minutes, then remove the springform ring and cool completely. Refrigerate before cubing for cleaner cuts.
  10. Divide into 10 equal slices. Set aside 4 slices for the churro bites and store the remaining cake.
Make the Caramel
  1. Brown the butter in a small saucepan over medium heat until the milk solids are golden and smell nutty.
  2. Reduce the heat to medium-low. Carefully stir in the maple syrup and coconut sugar; the mixture may bubble.
  3. Cook at a gentle bubble for 2–3 minutes, stirring frequently.
  4. Slowly whisk in the milk, taking care as it may foam. Cook gently for another 2–4 minutes, until glossy and slightly thickened.
  5. Remove from the heat and stir in the vanilla and salt. Let stand for about 5 minutes. The caramel will thicken as it cools.
Air Fry and Coat the Bites
  1. Cut the 4 chilled cake slices into 1–1½-inch cubes. Keep them substantial enough to retain a soft center.
  2. Preheat the air fryer to 340°F. Mix the maple churro sugar ingredients in a shallow bowl.
  3. Lightly brush the cake cubes with about half the melted butter. Arrange in a single layer with space between them, working in batches as needed.
  4. Air fry for 6–9 minutes, gently turning halfway through. Watch closely toward the end: the cinnamon maple topping can darken quickly.
  5. Remove when the edges are golden and crisp and the centers remain soft. Lightly brush with the remaining melted butter and gently roll in the maple cinnamon sugar while hot.
  6. Serve immediately with warm salted maple brown butter caramel.

Notes

  • Apple powder: Use unsweetened powder made from freeze-dried whole apples. Apple fiber, apple pectin, and flavored drink powders are different ingredients.
  • Recipe adaptation: Removing four fresh apples changes the cake’s moisture, volume, and bake time. The apple-powder version needs a test bake before its timing and texture can be considered confirmed.
  • Cold cake cuts best: Completely cooled, refrigerated cake holds together better during cubing and turning.
  • Coating quantity: The ⅓ cup maple sugar is listed once, in the coating. It is not an additional ingredient in the bites.
  • Butter quantity: Use the single tablespoon melted butter across both brushing steps.
  • Caramel texture: This milk-based caramel may be thinner than a cream-based sauce. Let it cool briefly before deciding whether it needs more cooking.
  • Nutrition: Estimates include all the prepared coating and caramel, even if some remains in the bowl. They include only 4 of the cake’s 10 slices, not the leftover cake.
  • No cereal required: The cinnamon crunch comes from the maple sugar topping; this recipe does not contain Cinnamon Toast Crunch cereal.
