The Spanish Aperitivo Tradition
In Spain, small bowls of nuts, olives, and crunchy snacks are traditionally served as part of the aperitivo, the pre meal ritual meant to spark conversation and open the appetite. You’ll find mixes like this on bar counters alongside vermouth, cava, or wine, often made with whatever nuts and legumes are on hand and seasoned simply with salt, smoke, and citrus. There isn’t one official recipe. The idea is variety, crunch, and something salty enough to keep you lingering at the table. This mix is a modern, clean ingredient take on that tradition, inspired by classic Spanish bar snacks but adapted for easy home entertaining.

- 1 cup roasted fava beans
- 1 cup roasted almonds or macrona almonds
- 1 cup corn nuts
- 1 bag mini salted pretzel sticks
- 1 1/2 cups Simple Mills Farmhouse Cheddar crackers
- 1/3 cup extra virgin olive oil
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 1/2 tsp garlic powder
- 1 1/2 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp dried dill
- 1 tsp lemon pepper seasoning
- 1/2 tsp black pepper
- 1/4 tsp cayenne
- tsp flaky sea salt
- 1 cup dried split fava beans
- 2 tbsp olive oil
- 2 tsp salt
Method
- Preheat the oven to 300°F. Line two baking sheets with parchment paper.
- In a large bowl, add the roasted chickpeas, roasted fava beans, almonds, corn nuts, pretzel sticks. Don't add the cheddar crackers yet.
- In a separate bowl, whisk together the olive oil, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, smoked paprika, dill, lemon pepper, black pepper, cayenne, and flaky sea salt.
- Pour the seasoning over the dry mix and toss until everything is evenly coated.
- Spread the mixture evenly across the baking sheets in a single layer.
- Bake for 10 to 12 minutes, stirring once halfway through, just until warmed through and fragrant.
- Let cool completely so it crisps up fully, then add the cheddar crackers at the end. Toss to combine.
- Transfer to a serving bowl and enjoy with prosecco, wine, or your favorite cocktail.
- Soak dried split fava beans in water for 6 to 8 hours or overnight.
- Drain and dry thoroughly using a clean kitchen towel.
- Toss with olive oil and salt.
- Roast at 400°F for 30 to 40 minutes, stirring every 10 minutes, until golden and crisp.
- Let cool completely before using. Beans will crisp up as they cool.
