Harvest Pumpkin Lasagna
This harvest pumpkin lasagna has sweet roasted pumpkin, golden mushrooms, tender zucchini, and roasted garlic tomato sauce tucked between layers of pasta and cheese. Feta brings a little tang inside, while mozzarella and cheddar melt into a golden, bubbly top. Roasting the pumpkin first gives it tender centers and caramelized edges, so you get savory fall flavor in every layer. Let it settle, cut a big square, and get a little of everything in each bite.
Ingredients you’ll need:
- Sugar pumpkin: A cooking pumpkin with flavorful flesh that roasts well. Peel, seed, and cube it before measuring.
- Zucchini: Thin lengthwise slices fit neatly into the layers. Roast first to reduce excess moisture.
- Mushrooms: Brown until their liquid evaporates for a savory filling that does not water down the sauce.
- Onion and garlic: Build flavor underneath the vegetables and tomato sauce.
- Roasted garlic tomato sauce: Keeps preparation manageable while adding rich tomato flavor.
- Lasagna noodles: This version uses regular noodles cooked before assembling.
- Feta: Adds salty, tangy flavor to the vegetable filling.
- Mozzarella and cheddar: Create melted cheese layers and a golden topping.
- Basil and rosemary: Bring savory herb flavor that complements the pumpkin.

How to Make Harvest Pumpkin Lasagna
Step 1: Roast the Vegetables
Toss the pumpkin and zucchini with olive oil and seasoning. Roast until tender and lightly golden, removing the zucchini first if it finishes sooner.
Step 2: Cook the Noodles
Boil according to the package directions, drain, and lay separately so they do not stick.
Step 3: Brown the Mushroom Filling
Soften the onion, then cook the mushrooms until their liquid evaporates. Add the garlic, herbs, and half the tomato sauce.
Step 4: Build the Layers
Start with a little sauce beneath the noodles. Layer the mushroom filling, feta, zucchini, pumpkin, and mozzarella. Finish with sauce-covered noodles and the remaining cheeses.
Step 5: Bake Until Golden
Bake until the filling bubbles and the cheese turns golden. Cover loosely if the top browns too quickly.
Step 6: Rest and Slice
Let the lasagna rest for 10–15 minutes so the layers settle before cutting.

- Cook the mushrooms until their excess liquid evaporates.
- Cover the final noodle layer with sauce.
- Taste before adding all the salt.
- Rest before slicing for cleaner portions.
How to Store
Fridge: Refrigerate in an airtight container for up to 4 days.
Freezer: Freeze cooled portions in airtight containers for up to 2 months. Thaw overnight in the refrigerator.
Reheat: Cover and warm in a 350°F oven until hot throughout, or microwave individual portions. Add a spoonful of sauce if needed.
Make Ahead: Assemble up to 1 day ahead and refrigerate. Bake covered until the center is hot, then uncover to brown the top. Allow extra time for a chilled dish.
Frequently Asked Questions
Can I Use Canned Pumpkin Purée?
This recipe uses roasted pumpkin pieces. Purée would change the moisture and texture of the layers, so it is not a direct substitute.
Can I Use Butternut Squash Instead?
Yes. Replace the pumpkin with the same volume of peeled, cubed butternut squash and roast until tender.
Can I Use Oven-Ready Noodles?
This method is written for boiled noodles. Oven-ready noodles need sufficient liquid and usually a covered bake. Follow their package guidance rather than using this method unchanged.
Why Is My Lasagna Watery?
Vegetables release moisture as they cook. Roast the zucchini, cook the mushroom liquid off, and let the baked lasagna rest before slicing.
Can I Replace the Feta?
Ricotta works for a milder filling, though the texture will differ. Drain it if watery and adjust the seasoning.
Is This Recipe Vegetarian?
It is meat-free as written. Choose cheeses made with vegetarian rennet for a vegetarian version.

- 1 box lasagna noodles
- 2 tbs extra virgin olive oil
- 1 medium zucchini
- 3 cups sugar pumpkin
- 1 package mushrooms
- 1 large yellow onion
- 3 cloves garlic (minced)
- 1 jar red sauce (recommend Rao’s Roasted Garlic Sauce)
- 1 tsp salt
- to taste black pepper
- 1 tsp dried basil
- 1 tsp garlic salt
- 1 tsp dried rosemary
- 1 cup feta cheese
- 1 1/2 cup mozzarella cheese
- 1/2 cup cheddar cheese
Method
- Preheat the oven to 400°F. Lightly grease a 9 × 13-inch baking dish.
- Arrange the pumpkin and zucchini on a large baking sheet, keeping them in separate areas. Toss with 1 tablespoon olive oil, a portion of the measured salt, and black pepper.
- Roast for approximately 20–30 minutes, until the pumpkin is fork-tender and lightly golden. Check the zucchini earlier and remove it when tender. Use two trays if the vegetables are crowded.
- Bring a large pot of salted water to a boil. Cook the lasagna noodles according to the package directions. Drain and lay separately on a lightly oiled tray.
- Heat the remaining tablespoon olive oil in a large skillet over medium heat. Add the onion and cook for 4–5 minutes, until softened.
- Add the mushrooms and cook until browned and their released liquid has evaporated. Stir in the garlic and cook for another minute.
- Add the basil, garlic salt, rosemary, and black pepper. Stir in approximately half the tomato sauce. Taste before adding any remaining plain salt, then remove from the heat.
- Spread a thin layer of the remaining tomato sauce across the bottom of the prepared baking dish.
- Add a layer of noodles, followed by the mushroom mixture, crumbled feta, and roasted zucchini.
- Add a second layer of noodles. Top with the roasted pumpkin, some of the remaining sauce, and half the mozzarella.
- Add the final layer of noodles. Spread the remaining tomato sauce over the entire surface, covering the noodles.
- Sprinkle with the remaining mozzarella and cheddar.
- Increase the oven temperature to 450°F.
- Bake uncovered for 20–25 minutes, until the filling is hot and bubbling and the cheese is golden. Loosely cover with foil if the top browns before the center heats through.
- Rest for 10–15 minutes before slicing into 6 portions.
Nutrition
Notes
- Pumpkin: This version replaces the original acorn squash with cubed sugar pumpkin. Use fresh cooking pumpkin rather than canned purée.
- Package sizes: Nutrition assumes a 12-ounce box of noodles, a 24-ounce jar of sauce, and an 8-ounce package of mushrooms.
- Vegetable moisture: Roast the zucchini and cook the mushroom liquid off before assembling.
- Sauce placement: Reserve enough sauce to cover the final noodle layer so it does not dry out.
- Salt: The sauce, feta, and garlic salt already contribute sodium. Taste before using all the plain salt.
- Vegetarian cheese: Choose cheeses made with vegetarian rennet if needed.
- Make ahead: Assemble up to a day ahead and refrigerate. Bake covered at 400°F until hot throughout, then uncover to brown the cheese. A chilled lasagna needs additional time.
- Nutrition: Estimates include all listed cheese and 2 tablespoons olive oil. Extra oil for greasing is excluded.
