  • 1/2 cup peanut butter or almond butter
  • 2 tbsp tahini
  • 1/2 cup walnuts crushed
  • 1/3 cup pistachios chopped
  • 1/2 cup pomegranate seeds
  • 1 pinch flaky sea salt
Cottage Cheese Layer
  • 1/2 cup cottage cheese no salt added
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
Chocolate Layer
  • 1 cup dark chocolate chips
  • 1 tbsp coconut oil

Method
 

Prepare the Layers
  1. Blend cottage cheese, maple syrup, and vanilla until completely smooth and creamy, then set aside. Melt chocolate chips with coconut oil until smooth and glossy and set aside to cool slightly.
Assemble the Bark
  1. Line a tray with parchment and arrange the dates tightly in a single layer, opening and pressing them together to form a unified base. Spread the nut butter evenly over the dates, drizzle with tahini, and lightly swirl, then spread the cottage cheese layer over the top in an even layer.
Add Toppings and Freeze
  1. Sprinkle walnuts, pistachios, and pomegranate seeds over the surface, then drizzle melted chocolate across the entire bark and finish with flaky sea salt. Freeze until firm, then break into pieces and serve straight from cold.
