Ingredients
  

Crepes
  • 2 eggs large
  • 1/2 cup milk or almond milk
  • 1/2 cup all purpose flour
  • 1/2 tsp vanilla extract
  • 1 pinch salt
  • 1 tsp butter or oil
Whipped Ricotta Yogurt Filling
  • 3/4 cup ricotta part skim
  • 1/2 cup Greek yogurt thick
  • 2 tbsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • 1 pinch salt
Cherry Compote
  • 1 1/2 cups cherries pitted
  • 1 tbsp honey or maple syrup
  • 2 tbsp water
  • 1 splash vanilla optional
Finish
  • 2 tbsp almonds toasted, sliced
  • 1 drizzle honey

Method
 

Make the Crepes
  1. Whisk all crepe ingredients until smooth and let the batter rest briefly, then cook thin crepes in a lightly greased pan until just set, stacking and keeping warm.
Make the Filling and Compote
  1. Blend ricotta, yogurt, honey, vanilla, and salt until smooth and fluffy. Simmer cherries with honey and water until soft and glossy, then cool slightly.
Assemble and Serve
  1. Fill crepes with whipped ricotta yogurt, fold loosely, top with warm cherry compote, and finish with toasted almonds and a light drizzle of honey.
